Granola

Kevin and I have been on this yogurt + granola + fruit kick for the last month. We are both really enjoying it so I thought I would try and make some homemade granola. It turned out pretty good!

What you will need:

*3 cups rolled oats
*1 cup slivered almonds
*1 cup cashews
*3/4 cup shredded sweet coconut
*1/4 cup plus 2 tablespoons dark brown sugar (I didn't realize it asked for Dark until I started making it so I just used my regular golden brown sugar and it still turned out fine)
*1/4 cup plus 2 tablespoons maple syrup
*1/4 cup vegetable oil
*3/4 teaspoon salt
*1 cup raisins (optional)


Directions:

Preheat oven to 250 degrees

In a large bowl, combine the oats, nuts, coconut, and brown sugar

In a separate bowl, combine maple syrup, oil and salt. Combine both mixtures and pour onto 2 sheet pans.


Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.

Remove from oven and transfer into large bowl. Add raisins and mix until evenly distributed.



We left the raisins out completely. If I were to make it again I think I would add a little more coconut and a little less salt, but overall it was quite tasty!

Watching Tv with daddy

Morgan has now discovered the television. If it is on and I am trying to get her ready for bed....she will crane her neck to watch. Last  night she was hanging out with daddy and I snapped a couple of pictures. :)

Leg Warmers

I call this look baby flash dance (without the actual dancing and bucket of water). I originally had her just wearing her t-shirt and leg warmers, but that looked too much like county fair baby. You know, the ones that walk around sipping Coca-Cola out of their bottles. So I quickly put the onesie on as well. This particular outfit might  not have matched perfectly, but we were just hanging out at home.

The last picture I took while Morgan was looking at her mobile. She LOVES it! When she sees us getting ready to turn the dial she smiles and starts kicking her legs. That is a good place to put her while I am doing laundry :)

3 months

Well Morgan is now 3 months old and just as sweet as ever. She sleeps pretty well these days. Usually going to bed at 8:30 Pm and wakes up around 6-6:30 Am. It would be AWESOME if I didn't still feel the need (more like a compulsion) to get up in check on her in the middle of the night-HA. She is now constantly looking around her taking everything in. She LOVES it when we sing to her and she has the most contagious smile.We have also (probably to our regret later) taught her how to stick her tongue out. It is so fun to watch her change and grow. :)
